I love to cook and, I have to admit, I'm a pretty darn good cook. So...I asked my husband. He shook his head, admitted there were so very many, but then said... "One that instantly comes to mind is Brazilian Hot Dogs." It is a family and friend favorite as well. It's based on a Brazilian street food recipe and is oh-so easy!
I can't give an actual recipe with measurements, because I just don't cook that way. However, I can give you "abouts" :-)
You will need to heat some olive oil in a large sauce pan and saute some chopped garlic. While it's sauting cut up onions, tomatoes, and green peppers (I usually slice them all in strips to make them easier to eat). Don't worry about how many of each... if you have more left over, it freezes well and you can throw more hot dogs in!
Once the garlic is soft, add the remainder of the vegetables, a bit of salt, about 2 Tablespoons of tomato paste, a cup of water and a package of hot dogs (your favorite works - we use all-beef).Bring it to a boil, then turn the fire down to simmer, and cook until the vegetables are tender.
Serve on hot dog buns (open top work best), with a little mayo, then the hot dog, then vegetables. If desired, a few drops of hot sauce can be added.
